Christmas Spiced French Toast

  • 4 thick slices brioche
  • 1 large free-range egg
  • 0.5 tsp mixed spice
  • 0.5 tsp vanilla extract
  • 1 tsp light olive oil or similar
  • Fruit, maple syrup or icing sugar to serve


  • Heat the oil in a large non-stick frying pan over a medium heat.
  • Whisk the egg, milk, mixed spice and vanilla extract together in a wide shallow bowl that's large enough to fit two slices of brioche in it.
  • Place two slices of brioche in the liquid and leave for around 15-30 seconds depending on how thick the bread is. Carefully turn them over and leave for another 30 seconds.
  • When the oil is hot, add the soaked brioche to the pan and cook for 5 minutes or until it is golden.
  • Flip the slices of brioche over and cook the other side for another 3-4 minutes. Transfer to a warm plate and cook the other two slices in the same way. You may need to add a little more oil to the pan.
  • Serve the Christmas Spiced French Toast with a sprinkle of icing sugar and some fresh fruit or berries. You could add a drizzle of maple syrup or honey if you like or even a scoop of vanilla ice-cream to turn this breakfast dish into dessert.
